A matte protector scatters the light hitting it rather than reflecting it. That removes the mirror effect in sunlight and makes fingerprints invisible — but the same layer that scatters reflections also scatters the image.
A glossy screen returns light in the same direction, which is why you see the window, or your own face, sharply reflected. A matte finish carries a microtexture that scatters that light in many directions. The reflection does not disappear: it spreads out, and stops being a recognisable image to become a soft veil.
The price is that the same microtexture also acts on the light leaving the panel. The result is a slightly less defined image, with marginally less saturated colours and, on high-resolution displays, a fine grain — sometimes described as sparkle — visible against white backgrounds.
If you use the phone outdoors. Under direct summer sun, the difference between a readable screen and an unreadable one can be exactly the matte finish. It is the strongest argument in its favour.
If you game. A finger glides noticeably better across a matte surface than polished glass, particularly with a slightly damp hand. That is why matte protectors are marketed as "gaming".
If you draw or take notes with a stylus. The texture adds a paper-like friction and gives far more control than smooth glass, which feels slippery under a pen.
If fingerprints bother you. Not that they stop forming — the diffuse surface makes them practically invisible.
If you paid for a high-end panel, a matte protector undoes part of what you paid for. Photography, HDR video, or anything where colour and detail matter, calls for a glossy finish — or no protector at all.
It also makes little sense on a tablet used mostly indoors for video. And the grain effect is more visible the higher the pixel density, so it shows up more on a recent flagship than on a mid-range handset.

That is its strength. A finger glides far better over the matte surface than over polished glass, especially with some moisture on your hand. It is why they are sold as gaming protectors.
The good ones do, but not all. This is a mandatory check on the listing: look for explicit mention of your model and of the under-display sensor, optical or ultrasonic.
In commercial practice the two terms are used interchangeably. Both describe a finish that scatters light rather than reflecting it; what varies between products is the strength of the treatment, not the category.
